Cocktail French Onion Tarts
- 2 large vidalia onions, minced fine in food processor
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 1 bay leaf, crumpled to release flavor but still whole
- 1 teaspoon sage
- 1 teaspoon thyme
- 1 teaspoon and sea salt
- 1 tablespoon sherry wine or 1 tablespoon marsala
- 1 sheet frozen puff pastry, thawed and rolled thin
- Put oil in skillet and saute' onions and garlic.
- Add seasonings and sherry, voer, and simmer on very low heat for 45 minutes, or until mixture is very soft and thick.
- Roll out dough and cut with 2" biscuit cutter.
- Press into miniature muffin tin, fill with 2 tsp onion puree, sprinkle with poppy seeds, and bake at 350 until browned.
