Half And Half Strawberry Pie Recipe
- 1 quart. strawberries
- 1 c. sugar
- 3 tbsp. cornstarch
- Juice of 1 lemon (may substitute 2 tbsp. concentrated lemon juice)
- Cold Whip
- Baked pie shell
- Cap and wash strawberries.
- Put half of berries in saucepan and mash.
- Mix sugar and cornstarch, adding to strawberries which have been mashed.
- Add in lemon juice.
- Cook till mix is thick and translucent/soft.
- Cold.
- Cut the other half of the berries in half and fold into cooked mix.
- One hour before serving, pour into cooked pie shell; top with whipped cream and chill.
- The combination of cooked and raw berries gives a great flavor.
