Green Chilaquiles

  1. Cook and stir onion in lightly oiled skillet on medium heat to 5 min.
  2. or until tender.
  3. Add garlic; cook and stir an additional 30 seconds.
  4. Place onion mixture in blender container.
  5. Add tomatillos, chiles and cilantro; cover.
  6. Blend until smooth.
  7. Season with salt and pepper to taste, if desired.
  8. Heat lightly oiled skillet on medium-high heat.
  9. Add tortilla strips and chicken; mix lightly.
  10. Top with tomatillo sauce and cheese; cover.
  11. Cook 3 to 5 min.
  12. or until mixture is heated through and cheese is melted.
  13. Serve hot with refried beans and lime wedges.
