Rattlesnake Chili
- Vegetable oil
- 1 large onion, diced
- Red Chile Sauce, recipe follows
- 6 rattlesnake fillets, or 8 ounces meat
- Double sweet corn, kernels only, to taste
- Poblano peppers, diced, to taste
- Serrano peppers, diced, to taste
- Jalapeno peppers, diced, to taste
- Salt
- In a large skillet, heat the oil and add the onions.
- Cook the onions until they are soft and slightly tender.
- Add the Red Chile Sauce and the remaining ingredients.
- Cover the skillet and stew all of the ingredients together for approximately 1 hour.
- Season the chili with salt.

- Ancho peppers, diced, to taste
- 1 white onion, diced
- Several tomatoes, chopped
- Cumin, whole seeds, to taste
- 2 tablespoons honey
- 1 cup chicken stock
- Combine all of the ingredients in a blender and process until smooth.
