Fresh Apple Spice Cake
- 1 c. vegetable oil
- 2 c. sugar
- 3 eggs
- 3 c. all-purpose flour
- 1 tsp. soda
- 1/4 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 tsp. vanilla
- 1 c. chopped pecans
- 3 c. peeled, finely chopped apples

- Combine oil and sugar; beat well.
- Add eggs, one at a time, beating well after each addition.
- Combine flour, soda, salt, cinnamon and nutmeg.
- Stir.
- Add dry ingredients to sugar mixture, beating well.
- Stir in pecans and apples.
- Pour batter into a greased and floured 10-inch tube pan.
- Bake at 350u0b0 for 1 hour and 15 minutes.
- Using a toothpick, punch holes in cake while hot. Spoon glaze over cake.
- Cool; remove from pan.
- Yields one 10-inch cake.
