Half-Cajun BBQ Meatloaf
- 2 lbs ground beef
- 14 teaspoon ground sage
- 1 tablespoon salt
- 12 teaspoon dry mustard
- 14 teaspoon pepper (black)
- 1 teaspoon red pepper (cayenne)
- 12 teaspoon white pepper
- 12 teaspoon ground cumin
- 12 teaspoon ground nutmeg
- garlic powder (generous)
- onion powder (generous)
- dried onion flakes
- 1 tablespoon Tabasco sauce
- 1 tablespoon Worcestershire sauce
- 12 cup evaporated milk
- 12 cup ketchup
- 1 egg
- 1 cup plain breadcrumbs
- bullseye original barbecue sauce (to taste @ 1/4 thick)
- Mix all ingredients together, except for BBQ Sauce.
- Using hands, continue to mix and mash together to form a compact loaf.
- Place in a 9 x 5 x 3 loaf pan.
- Top with BBQ sauce, preheat oven to 350 and cook for 35 minutes.
- Then raise temp.
- to 400 and cook for 25 minutes more.
