Mini Burgers with Bacon

  1. Chipotle Mayonnaise: Mix ingredients.
  2. Refrigerate until ready to use.
  3. Angus Burgers: Shape meat into 192 small patties (or into 48 patties for trial recipe), each weighing 1.6 oz.
  4. and measuring about 2-1/2 inches in diameter.
  5. Sprinkle lightly with steak seasoning.
  6. Cook on 350 degrees F flat-top grill 2 min.
  7. on each side or until done (160 degrees F), topping each of half the burgers with 1 cheese piece for the last 30 sec.
  8. For each serving: Place 3 plain burgers on bottom halves of 3 buns.
  9. Top each with 1 cheeseburger, 3 bacon pieces and top of bun.
  10. Thread 1 gherkin onto each of 3 wooden toothpicks; insert in tops of buns.
  11. Place on serving plate.
  12. Garnish plate with 3 lettuce pieces and 3 tomato slices.
  13. Serve with 2 oz.
  14. Chipotle Mayonnaise in a ramekin.
