Pasta With Golden Corn Sauce
- 6 ears corn, kernels from
- 1 12 cups chicken broth
- 1 pinch saffron thread
- 12 cup heavy cream
- 14 lb smoked turkey or 14 lb ham, cut into thin strips
- 1 cup halved cherry tomatoes
- 14 cup chopped fresh basil
- salt and pepper
- 1 lb linguine
- Bring a large pot of salted water to a boil for the pasta.
- Combine the corn, chicken broth and saffron in a medium saucepan.
- Bring to a boil and simmer until corn is tender, about 1 minute.
- Transfer the corn mixture to a blender or food processor, add the cream and pulse to make a coarse puree.
- Return the mixture to the saucepan and add turkey, tomatoes and basil.
- Season with salt and pepper.
- Keep warm over low heat.
- Cook the pasta to just al dente.
- Drain.
- Combine the pasta with the sauce in a serving bowl, toss well, and serve immediately.
