Old Fashioned Sweet Potato Pie
- 4 c. cooked potatoes
- 1/2 c. light brown sugar
- 1/2 c. granulated sugar
- 1/2 c. butter, softened
- 2 eggs, separated
- 2 Tbsp. flour
- 1/4 tsp. salt
- 1/4 tsp. ginger
- 1/4 tsp. cinnamon
- 1/2 c. evaporated milk
- 1/4 c. granulated sugar
- 2 (9-inch) pie shells
- Bake pie shells until lightly brown.
- Mash potatoes until very smooth.
- Combine potatoes, 1/2 cup sugar, butter, egg yolks, spices, flour and salt in a large mixing bowl.
- Use electric mixer; beat until light and fluffy, about 5 to 7 minutes.
- In another bowl, beat egg whites until foamy; gradually add 1/4 cup sugar, beating until stiff.
- Fold egg white mixture into potato mixture.
- Pour filling into browned pie shells.
- Preheat oven to 400u0b0.
- Bake for 10 minutes.
- Reduce heat to 350u0b0 and bake an additional 45 to 50 minutes or until set.
- Cool.
- Makes two pies.
