Old Fashioned Sweet Potato Pie

  1. Bake pie shells until lightly brown.
  2. Mash potatoes until very smooth.
  3. Combine potatoes, 1/2 cup sugar, butter, egg yolks, spices, flour and salt in a large mixing bowl.
  4. Use electric mixer; beat until light and fluffy, about 5 to 7 minutes.
  5. In another bowl, beat egg whites until foamy; gradually add 1/4 cup sugar, beating until stiff.
  6. Fold egg white mixture into potato mixture.
  7. Pour filling into browned pie shells.
  8. Preheat oven to 400u0b0.
  9. Bake for 10 minutes.
  10. Reduce heat to 350u0b0 and bake an additional 45 to 50 minutes or until set.
  11. Cool.
  12. Makes two pies.
