Ice Cream Ribbon Pie

  1. Place one box of junior mint chocolates in freezer.
  2. Melt remaining mints with butter; microwave for about 1 minute or stir over low heat.
  3. Stir until smooth.
  4. Spread the 2 cups of ice cream into crust; drizzle with melted mints.
  5. Place in freezer until chocolate is set, about 10 minutes.
  6. Chop cold junior mint chocolates; stir into vanilla (or chocolate) ice cream.
  7. Spoon into crust.
  8. Loosely cover and freeze several hours or overnight.
  9. Garnish as desired.
