Choco-Oatmeal Peanut Butter Cookies
- 1 1/2 c. firmly packed brown sugar
- 1 c. creamy or chunky style peanut butter
- 3/4 c. margarine (1 1/2 sticks)
- 4 tsp. vegetable oil
- 1/3 c. water
- 1 egg
- 1 tsp. vanilla
- 3 c. oatmeal
- 1 1/2 c. flour
- 1/2 tsp. baking soda
- 1 1/2 c. semi-sweet chocolate chips
- 1/3 c. chopped nuts or peanuts
- Heat oven to 350u0b0.
- Beat brown sugar, peanut butter, margarine and vegetable oil until fluffy.
- Blend in water, egg and vanilla. Add combined flour, oats and baking soda.
- Mix well.
- Add chocolate chips and nuts.
- Cover and chill 1 hour.
- Shape into 1-inch balls.
- Place on ungreased cookie sheet.
- Using bottom of glass dipped in sugar, press until 1/4-inch thick circles.
- Bake 8 to 10 minutes or until edges are brown.
- Remove to wire rack. Makes about 6 dozen.
