Chile Chicken Casserole Recipe
- 1/2 c. minced onion
- 2 tbsp. butter
- 3 (101/2 ounce.) cans cream of mushroom soup
- 1 c. minced pimentos
- Warm boiled noodles, 16 ounce. uncooked
- 2 tbsp. finely minced chile peppers (2 ounce.)
- 3-4 c. cooked chicken
- 2-3 c. grated sharp cheddar cheese
- Pepper and salt
- Saute/fry onion in butter till yellow.
- Stir soup, pimento, and chile pepper.
- In buttered 4 qt baking dish (or possibly two 2 qt dishes) layer half of the ingredients in this order: noodles, chicken (sprinkle with salt and pepper), soup mix and cheese.
- Repeat layers, one more of each.
- Bake 45 min.
- Makes 12 servings.
