Fiesta Bean Dip
- 1 (15 ounce) can black beans
- 1 (15 ounce) can red beans
- 1 (15 ounce) can pinto beans
- 1 (15 ounce) can black-eyed peas
- 1 (15 ounce) can garbanzo beans (optional)
- 1 large sweet pepper, chopped (green, yellow, orange)
- 1 large red onion
- 1 (12 -16 ounce) package frozen corn kernels
- 1 jalapeno pepper, chopped (no seeds)
- 4 roma tomatoes, chopped
- 14 cup fresh parsley or 14 cup fresh cilantro, chopped
- 4 limes, juice of
- 10 -20 drops Tabasco sauce
- salt, to taste
- Stir fry or broil the corn.
- Combine all ingredients and chill before serving.
