Maple Pecan Coleslaw

  1. Preheat the oven to 180C.
  2. Put a piece of baking parchment paper on a baking tray.
  3. Spread the pecans out on the baking sheet and pour the maple syrup all over
  4. Cook them for 7 minutes (time it...or hope your sense of smell is good enough to detect when they're done!)
  5. Remove pecans from the oven and set aside.
  6. Combine the buttermilk and mayonnaise in a bowl or jug.
  7. Put the cabbage, carrot and red onion (drained and dried on kitchen paper) in a large mixing bowl.
  8. Season with white pepper.
  9. Serve portions either with or without a few pecans, roughly broken, on top.
