Banana Bars
- 34 cup margarine, softened
- 12 cup packed brown sugar
- 1 egg
- 4 cups quick-cooking oats
- 1 12 cups mashed ripe bananas
- 12 teaspoon salt
- 12 teaspoon cinnamon
- 12 cup chopped pecans
- 12 cup raisins
- 14 cup dried apricot
- Beat the margarine and brown sugar in a mixing bowl until light and fluffy, scraping the bowl occasionally.
- Add the egg.
- Beat until blended.
- Stir in the oats, bananas, salt and cinnamon.
- Add the pecans, raisins, and apricots and mix well.
- Spoon the batter into a greased 9x13 pan.
- Bake at 350 degrees for 45 minutes.
- Cool in pan on wire rack.
- Cut into 2 inch bars.
- May freeze for future use.
