Double Baked Potato Recipe
- 4 lg. baked potatoes
- 1/2 c. lowfat milk
- 2 tbsp. butter
- 1/2 teaspoon salt
- Dash of pepper
- 2 tbsp green onion slices
- 2 1/2 c. (10 ounce.) shredded Deluxe processed American cheese
- 4 crisply cooked bacon slices, crumbled
- Cut a lengthwise slice from top of each potato; scoop out centers, leaving 1/8 inch shell.
- Mash potatoes; add in lowfat milk, butter, and seasonings.
- Beat till fluffy; stir in 2 c. processed cheese and onion.
- Fill shells; sprinkle with bacon.
- Place on ungreased cookie sheet; bake at 400 degrees for 20 min.
- Top with remaining process cheese; continue baking till process cheese begins to heat.
- 4 servings.
