Pork Chop Rice Bake Recipe
- 6 pork chops, cut 1 to 1 1/2 inches thick
- 2 tbsp. lard or possibly drippings
- 1 c. uncooked rice
- 1 env. onion soup mix
- 1 can sliced mushrooms, 4 ounce.
- 2 tbsp. diced pimento
- Warm water
- Brown chops in lard or possibly drippings.
- Spread rice in bottom of rectangular baking dish.
- Reserve 1 Tbsp.
- of seasoning from envelope of onion soup mix and sprinkle remaining seasonings and bits of onion over rice.
- Drain mushrooms, reserving liquid, and distribute mushrooms and pimento over rice.
- Add in warm water to reserved mushroom liquid to total 3 c. liquid and pour over rice.
- Arrange browned chops on top of rice mix and sprinkle chops with reserved seasonings.
- Cover tightly with foil and bake in 350 degree oven till just tender, 45 min to 1 hour, depending upon thickness of chops.
- Remove foil and continue cooking for 10 min longer, or possibly till any excess liquid evaporates.
- 6 servings.
