Sauteed Fish or Chicken With Plum Tomatoes & Spinach

  1. Heat 1 1/2 teaspoons oil in large pan over medium high heat.
  2. Sprinkle fish/chicken with salt and pepper.
  3. Add fish/chicken to pan.
  4. Cook until done.
  5. Remove from pan.
  6. Heat remaining olive oil over medium high heat.
  7. Add tomato and garlic.
  8. Saute 1 minute.
  9. Stir in wine.
  10. Simmer 2 minutes.
  11. Add spinach and cook until spinach wilts.
  12. Return fish/chicken to pan.
  13. Spoon tomato mixture over fish/chicken.
