Gluten/Dairy Free Molasses Cookies
- 1 cup millet flour
- 1 cup tapioca flour
- 1 cup brown sugar
- 12 cup brown rice flour
- 12 cup potato starch
- 12 cup rice flour
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 2 teaspoons baking powder
- 1 teaspoon xanthan gum
- 1 teaspoon salt
- 1 cup vegan margarine
- 12 cup honey
- 14 cup molasses
- 2 teaspoons vanilla
- 14 cup water
- 3 tablespoons sugar
- Mix all the dry ingredients.
- Mix all the wet ingredients.
- Mix the two together and beat for about 2 minutes on high.
- Drop onto pan in large spoonfuls and sprinkle sugar on top.
- Bake for 15 minutes at 325.
