White Chocolate Strawberry Mousse With Raspberries

  1. Heat gelatin and water in double boiler over medium heat until gelatin dissolves and mixture is very syrupy, stirring occasionally.
  2. Add chocolate; cook until smooth, stirring constantly.
  3. Remove from heat.
  4. Fold in whipped cream.
  5. Spread mixture into 9 x 5 x 3-inch loaf pan.
  6. Refrigerate until set, about 2 hours.
  7. Scoop mixture into 8 dessert dishes.
  8. Garnish with raspberries and mint.
