Lobster Bisque Recipe

  1. Place the lobsters in a large heavy pot.
  2. Cover with salted water.
  3. Bring to a boil and cook 5 min.
  4. Reduce heat and simmer 10 to 12 min more.
  5. Drain and plunge into cool water to arrest further cooking.
  6. Extract the meat, chop it and set it aside.
  7. Place the lobsters' remains in a roasting pan with the onion, celery, carrot, bay leaves and butter.
