Healthy Vegetarian Fried Rice

  1. Heat large skillet or wok, add oils, onions, mushrooms and celery.
  2. stir fry for about 3 minutes.
  3. Add peas and carrots, garlic and ginger stir fry 4 more minutes.
  4. add rice, soy sauce and vinegar stir fry about 8 minutes until heated through.
