Grecian Baked Fish Recipe
- 2 pound fish (red snapper or possibly any thick white fish)
- 5 or possibly 6 onions, sliced
- 4 or possibly 5 potatoes, sliced circular
- 1 can crushed stewed tomatoes, including juice
- 1/4 c. extra virgin olive oil
- 4 bay leaves
- 4 garlic cloves, sliced thin
- 1 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tbsp. paprika
- 4 tbsp. wine vinegar
- 2 tbsp. tomato paste, diluted with 1/2 glass water
- Lemon slices for garnish on fish
- Wash fish and season with a little salt, pepper and dash of paprika; set aside.
- In a 10"x15" glass pan, combine sliced onions, potatoes, crushed stewed tomatoes, bay leaves, garlic, salt, black pepper and paprika.
- Add in diluted tomato paste.
- Now arrange fish in center of pan and pour extra virgin olive oil all over including fish.
- Bake in 350 degree oven, covered with foil for first 40 min and uncovered for an additional 45 min.
- Add in wine vinegar over potatoes and onions on last 15 min of cooking and lemon slices on fish.
- Serves 4 to 6.
