Chocolate Mint Sundaes

  1. Stir 1 cup water and sugar in heavy small saucepan over medium heat until sugar dissolves; bring syrup to boil.
  2. Remove from heat.
  3. Stir in mint leaves.
  4. Let stand 1 hour.
  5. Using slotted spoon, remove mint leaves from syrup.
  6. Whisk cocoa into syrup.
  7. Bring to boil.
  8. Add butter and whisk until smooth.
  9. Refrigerate sauce uncovered until cold.
  10. (Can be made 1 week ahead.
  11. Cover and keep refrigerated.)
  12. Place 2 scoops of ice cream in each of 6 bowls.
  13. Drizzle each sundae with sauce; garnish with mint sprigs.
