Blue Berry Salad Recipe
- 2 (4 serving) Packages blackberry gelatin
- 2 c. boiling water
- 2 c. blueberries
- 1 (15 ounce.) can crushed pineapple
- 1 (8 ounce.) pkg. cream cheese
- 1 (8 ounce.) lowfat sour cream
- 1/2 c. sugar
- 1/2 teaspoon vanilla
- 1/2 c. minced nuts
- Dissolve gelatin in boiling water.
- Drain pineapple, reserving liquid.
- Add in sufficient water to make 1 c. and add in to gelatin.
- Add in berries and crushed pineapple to mix.
- Pour into 2-qt flat pan and refrigeratetill hard.
- Blend cream cheese, lowfat sour cream, sugar and vanilla.
- Spread over congealed gelatin.
- Sprinkle with nuts and chill.
