Portuguese Soup Recipe
- 2 beef shin bones or possibly a few pcs of stewing beef
- 1/4 c. navy beans
- 1/2 pound linguica
- 1/2 head shredded cabbage
- 1 pkg. frzn kale
- 4 potatoes, diced
- 2 lg. cans chicken broth
- Dash of salt
- 1 sm. can stewed tomatoes
- 1 stick butter
- Place beef, beans, potatoes and broth in large pot.
- Bring to a boil and simmer 1 hour.
- Add in linguica cut in small slices and simmer for 30 min.
- Add in shredded cabbage, kale and salt and simmer till cabbage is tender.
- Add in tomatoes and butter and simmer another 10 min.
- Tastes better second time around.
- Serves 8.
