Roasted Cherry and Brie Pizza

  1. Preheat oven to 450 degrees F (with a pizza stone inside, if you have one).
  2. Meanwhile, melt butter in a skillet and add onions.
  3. Cook on low for about 20 minutes, stirring occasionally.
  4. Onions should be a deep brown but not crispy when finished.
  5. Simmer balsamic on medium heat for 3-4 minutes until it has a syrup consistency.
  6. Set aside.
  7. Brush garlic olive oil over dough on pizza stone and bake 5 minutes.
  8. Remove from oven and lay the mozzarella and brie over the dough.
  9. Pile on cherries and caramelized onions and sprinkle with fresh rosemary.
  10. Drizzle with balsamic reduction.
  11. Bake 15-20 minutes.
  12. Remove from the oven and garnish with extra rosemary.
