Midwest Chowder Soup Recipe
- 2 c. diced raw potatoes
- 1/2 c. sliced carrots
- 1/2 c. minced celery
- 1/4 c. minced onion
- 1 tbsp. salt
- Dash pepper
- 1/4 c. butter
- 1/4 c. flour
- 2 c. lowfat milk
- 1 pound shredded cheese
- 2 c. cream style corn
- Combine the first 6 ingredients with 2 c. boiling water.
- Cover and simmer 10 min.
- Don't drain!
- In saucepan, heat butter, add in flour and blend.
- Gradually add in lowfat milk while stirring.
- Cook till thickened.
- Add in cheese; stir till melted.
- Add in cream style corn and undrained vegetables to cheese sauce.
- Heat, do not boil.
