Peanut Butter Toffee Bars

  1. Preheat oven to 350 degrees.
  2. Grease a 13x 9 inch baking pan with cooking spray; set aside.
  3. In a large bowl, with electric mixer, beat peanut butter and softened margarine till creamy.
  4. Add brown sugar, granulated sugar and vanilla and mix till thick and creamy.
  5. Beat in eggs and then flour.
  6. Stir in 1C of chocolate chips.
  7. Put dough into prepared pan and press dough evenly throughout pan.
  8. ( I found its easier using my hands to press the dough evenly ).
  9. Bake 20-25 minutes or until lightly browned.
  10. Remove from oven and immediately sprinkle with remaining 1C of chocolate chips.
  11. Let stand 5 minutes .
  12. Evenly spread melted chocolate completely over dough, then sprinkle with toffee bits.
  13. Cool completely.
  14. To serve cut into bars or squares.
