Sweet Potato Chili (Whole30)

  1. Place the dutch oven (or large pot with lid) on medium low heat and melt the fat (butter, ghee...)
  2. Dice up the onions (not too fine).
  3. Dice the celery 1/2 to 1 cup.
  4. Dice the garlic.
  5. Throw the onions in the pot
  6. As the onions lightly brown, Combine all the spices in a bowl and set aside
  7. Peal & Chop the sweet potatoes into 1 inch pieces or less
  8. Add the meat and diced garlic.
  9. Completely brown the meat
  10. Strain the diced tomatoes can, then add (the broth is liquid enough)
  11. Add the 3 tbs of tomato paste to thicken
  12. Add the 2 cups of broth
  13. Add the spices and mix well!
  14. Cover and bring to low boil (takes about 5 minutes)
  15. Turn heat down to low
  16. Add the chopped sweet potatoes and diced celery...mix
  17. Cover and simmer for at least 40 minutes; stir the pot a couple times during
  18. Add the chopped the cilantro and avocado fresh to serve.
