Apple-Molasses Bread

  1. Preheat oven to 350F (180C).
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Combine flour, baking powder, salt, cinnamon and nutmeg; set aside.
  5. Combine applesauce and molasses.
  6. Add dry ingredients alternately with applesauce mixture to egg mixture.
  7. Fold in raisins and nuts.
  8. Pour into a greased 9 1/4 x 9 1/4 x 2 3/4 inch loaf pan.
  9. Bake at 350F (180C).
  10. for 1 hour, or until a toothpick inserted into the center comes out clean.
  11. Cool 10 minutes, remove from pan and continue cooling on a wire rack.
