Apple And Cheddar Corn Muffins Recipe
- 1 2/3 c. Flour
- 1 tsp Flour
- 1 1/2 ounce Uncooked yellow corn meal
- 1 Tbsp. Baking pwdr
- 3/4 lb Apples,cored,pared,finely Minced..wt before cutting
- 1/2 c. Corn,thawed frzn
- 2 1/4 ounce Cheddar,reduced fat,shredded
- 1/3 c. Sugar
- 1 dsh Cinnamon
- 1 dsh Nutmeg
- 1/3 c. Corn oil
- 2 tsp Corn oil
- 3 x Large eggs, lightly beaten

- Preheat oven to 400 F. Line 12 muffin pan c. with paper baking c..

- In large bowl combine flour, cornmeal, and baking pwdr.
- Add in apples, corn, cheese, sugar, cinnamon, nutmet, stirring to combine.
- In small bowl, beat Large eggs and oil; stir into flour mix (don't overbeat...the mix will be stiff).

- Fill baking c. and bake in center of oven for 15 min.
- Makes 12 muffins.
- ONE MUFFIN= 1 1/2 F, 1/2 P, 1 B, 1/4 F, 25 Optional cal.
