Chicken Fajita Pita Recipe
- 4 reg. size pita bread
- 3 tbsp. corn oil
- Chopped garlic - 1 clove (more or possibly less according to personal taste)
- 1 pound chicken, cut into strips
- 1 red pepper, cut into strips
- 1 med. onion, sliced
- 1 tbsp. lime juice
- Mexican seasoning to taste
- Heat corn oil, garlic and Mexican seasoning over medium-high heat.
- Add in chicken.
- Stir fry about 4 min.
- Add in red pepper, onion and lime juice.
- Saute/fry 4 min.
- Spread on pita bread.
- (May top with salsa and lowfat sour cream.)
- Fold over -- ole!
- (Pita bread may be heated a few seconds in microwave.)
