Beef Sausage
- 5 lb ground beef chuck (medium grind)
- 2 tsp white pepper
- 2 tsp ground nutmeg
- 2 tsp sage
- 2 tbsp sugar
- 4 clove garlic (pressed)
- 2 tbsp sea salt
- 1 cup water
- 5 lb ground beef chuck ( medium grind )
- 1 1/2 tbsp sea salt
- 2 cup grated parmesan cheese
- 1 1/2 tbsp black pepper
- 1 tbsp basil
- 1 tbsp oregano
- 3 tsp mustard seed
- 8 clove garlic (pressed )
- 1 small onion (grated)
- 1 1/2 cup red wine
- The directions are the same for both recipes.
- Combine all ingredients, mix well & stuff into hog casing.
