Marinated Mushrooms
- 2 lb. small mushrooms
- 1/2 c. red wine vinegar
- 1/3 c. water
- 2 Tbsp. canola or corn oil
- 1 tsp. sugar
- 1 Tbsp. finely chopped onion
- 1 Tbsp. finely chopped parsley
- 1/2 tsp. dried basil, crushed
- 2 cloves garlic, finely chopped (2 tsp.)
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/2 red bell pepper, diced
- Clean the mushrooms, cutting the ends of the stems off.
- Set aside.
- Place remaining ingredients except bell pepper in a large saucepan and bring to a boil.
- Add the mushrooms and bell pepper. Bring to a boil again. Reduce the heat and simmer, uncovered, for 5 to 10 minutes or until the mushrooms are tender. Cool to room temperature.
- Refrigerate in covered container for several hours before serving.
