Marinated Mushrooms

  1. Clean the mushrooms, cutting the ends of the stems off.
  2. Set aside.
  3. Place remaining ingredients except bell pepper in a large saucepan and bring to a boil.
  4. Add the mushrooms and bell pepper. Bring to a boil again. Reduce the heat and simmer, uncovered, for 5 to 10 minutes or until the mushrooms are tender. Cool to room temperature.
  5. Refrigerate in covered container for several hours before serving.
