Carol's 100% Organic Whole Wheat Bread

  1. Start with organic natural product
  2. In a large mixer bowl.
  3. Add 3 1/2 cups of flour, yeast and salt.
  4. Mix well
  5. Small pan on low.
  6. Add 3 cups water, 1/2 cups molasses and 1/4 cup oil.
  7. Using a thermometer keep checking temp until between 120F and 130F.
  8. Then add warmed liquid to the dry mixture slowly, stir setting on the mixer.
  9. Slowly add 5 cups of flour.
  10. Switch to the dough hook when necessary.
  11. Knead the dough on the low setting for 5 to 8 minutes.
  12. Proof to double the size with rise in a large greased bowl.
  13. Punch down dough.
  14. Divide into 2 rounds.
  15. Place each load in 9 inch round cake pan.
  16. Slice cuts on top or not.
  17. Proof again to double the size.
  18. Bake at 375F for 40 to 45 minutes.
  19. Rack and cool
