Sesame Ginger String / Green Beans
- 1 12 lbs string beans, trimmed
- 4 tablespoons light sesame oil
- vegetable oil (for frying)
- 1 12 teaspoons fresh ginger, minced
- 1 12 teaspoons green onions, minced
- 2 garlic cloves, minced
- 2 tablespoons ham, minced
- 2 teaspoons sugar
- 2 teaspoons red wine vinegar
- 2 tablespoons soy sauce
- 1 teaspoon soy sauce
- 14 cup chicken stock
- 2 teaspoons cornstarch
- 2 teaspoons sesame seeds (toasted for garnish)
- Heat the oil until very hot.
- Blanch the beans in the hot oil for 30 seconds.
- Drain on paper towels.
- In a separate pan, saute the ginger, green onion, garlic, and ham for 4 minutes.
- Combine the sugar, vinegar, and soy sauce.
- Mix the chicken stock with the cornstarch.
- Add both liquid mixtures to the pan in which the ham mixture was sauteed and bring to a boil, stirring constantly.
- Add the string beans to the pan, heat, and coat with the sauce.
- Serve garnished with the toasted sesame seeds.
