Crunchy Green Bean & Red Pepper Casserole

  1. Heat oven to 350F.
  2. Lightly butter 2-quart casserole or baking dish; set aside.
  3. Butter both sides of bread slices with softened butter.
  4. Cut bread into small pieces; place into food processor bowl fitted with metal blade.
  5. Process until fine crumbs form.
  6. Combine bread crumbs and almonds in medium bowl; mix well.
  7. Set aside.
  8. Melt 1/4 cup butter in 12-inch skillet over medium heat.
  9. Continue cooking 3-4 minutes until golden brown.
  10. Add onion and bell pepper; continue cooking 2-3 minutes until vegetables are slightly softened.
  11. Stir in flour, salt and pepper; continue cooking, stirring constantly, 1 minute.
  12. Stir in half & half and Parmesan cheese.
  13. Continue cooking 1 minute.
  14. Stir in green beans.
  15. Pour into prepared casserole dish; sprinkle with breadcrumb mixture.
