Peach-Blueberry Hand Pies
- 1 pkg. (450 g) frozen puff pastry (2 sheets), thawed
- 1 fresh peach, chopped
- 1 cup blueberries
- 1 pkg. (85 g) Jell-O Lemon Jelly Powder
- 1 egg, beaten
- 2 tsp. coarse sugar
- Heat oven to 400 degrees F.
- Cut each pastry sheet into 4 squares; place in single layer on parchment-covered baking sheets.
- Toss fruit with dry jelly powder; spoon onto centres of pastry squares.
- Brush edges of pastry lightly with egg.
- Fold each pastry square diagonally in half; seal edges with fork.
- Brush tops with remaining egg; sprinkle with sugar.
- Bake 20 min.
- or until puffed and golden brown, turning and reducing oven temperature to 375 degrees F after 10 min.
- Cool slightly.
