Classic Ranch Meatballs
- 1 lb. (450 g) Yukon gold potatoes (about 3), cut into 1-inch pieces
- 1/2 cup Kraft Rancher's Choice Dressing, divided
- 1 lb. (450 g) ground chicken
- 1/2 cup finely chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1/4 cup dry bread crumbs
- 1 egg
- 1/2 lb. (225 g) green beans, trimmed
- Heat oven to 400 degrees F.
- Toss potatoes with 1 Tbsp.
- dressing; spread onto half of foil-covered rimmed baking sheet.
- Bake 15 min.
- Meanwhile, mix chicken, onions, bread crumbs, egg and 1/4 cup of the remaining dressing just until blended; shape into 12 (2-inch) meatballs.
- Add meatballs to baking sheet with potatoes; bake 20 min.
- or until done (160 degrees F).
- About 5 min.
- before meatballs and potatoes are done, add beans to pan of boiling water; cook 3 to 4 min.
- or until crisp-tender.
- Drizzle meatballs with remaining dressing.
- Serve with potatoes and drained beans.
