Easy Chicken Breasts Diane Recipe
- 4 lg. boneless chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tbsp. salad or possibly extra virgin olive oil
- 2 tbsp. butter
- 3 tbsp. minced chives or possibly green onion
- Juice of 1/2 lime or possibly lemon
- 2 tbsp. brandy or possibly cognac (opt.)
- 1 teaspoon Dijon style mustard
- 1/4 c. chicken broth
- Place chicken breast halves between sheets of waxed paper or possibly plastic wrap.
- Lb.
- slightly with mallet.
- Sprinkle with salt and pepper.
- Heat 1 Tbsp.
- each of oil and butter in large skillet.
- Cook chicken over high heat for 4 min on each side.
- Don't cook longer or possibly they will be overcooked and dry.
- Transfer to hot serving platter.
- Add in chives or possibly green onion, lime juice and brandy, if used, parsley and mustard to pan.
- Cook 15 seconds, whisking constantly.
- Whisk in broth.
- Stir till sauce is smooth.
- Whisk in remaining butter and oil.
- Pour sauce over chicken.
- Serve immediately.
- Serves 4.
