Caramelized Ginger Salmon
- 2 Tablespoons Peanut Oil
- 2 whole Skinless Salmon Fillets (about 0.75 Lbs Each)
- 2 pinches Salt
- 2 pinches Black Pepper
- 1/2 whole Lime, Juiced
- 1/2 cups Cilantro, Chopped
- 1 bunch Green Onions, Chopped
- 3 Tablespoons Brown Sugar
- 1 Tablespoon Minced Ginger
- 2 Tablespoons Fish Sauce
- 1 Tablespoon Soy Sauce
- 2 Tablespoons Dry Sherry
- 1 dash Red Pepper Flakes
- First, assemble the sauce: mix brown sugar, ginger, fish sauce, soy sauce, sherry, and red pepper flakes.
- Spread oil all over salmon pieces, then sprinkle on salt and pepper.
- Heat the remaining oil in a non-stick skillet over high heat.
- When the pan is nice and hot, add the salmon pieces.
- Cook for 1 minute, then gently flip using a sturdy spatula (to avoid breaking the salmon).
- Cook for 1 minute on the second side, and add the sauce.
- Leave heat on high or medium-high and cook for 3 minutes.
- Add lime juice and turn fillets again to coat in the sauce.
- Cook for 2 more minutes, then add the cilantro and green onions, and cook for 1 final minute or until the fish is just done (be careful not to overcook it).
- Serve over rice.
