Bean Soup
- 12 lb lean ground beef
- 1 onion, chopped
- 1 (8 ounce) can black beans
- 1 (8 ounce) can pinto beans
- 1 (8 ounce) can kidney beans
- 1 (8 ounce) can corn
- 1 (10 ounce) can rotel
- 1 (1 1/4 ounce) package taco seasoning mix
- 1 (1 ounce) package ranch dressing mix
- In pan, brown ground meat and add onion.
- Add all other ingredients.
- *If you drain the cans before adding them at this point add 1 1/2 cup of water.
- If you did not drain the cans, I like to use the juices for flavor, you probably wont need to add water unless you want your soup soupier.
- Simmer for 1 1/2 hours.
- Sprinkle with Cheddar cheese and sour cream.
- It's also yummy with Crispy Rounds.
