Fiesta Red Snapper

  1. Heat oil in large skillet over medium-high heat.
  2. Add onion and saute 3 minutes.
  3. Add green chilies, 2 tablespoons chopped cilantro and garlic; saute 2 minutes.
  4. Mix in tomatoes with juices, breaking up tomatoes with back of fork.
  5. Sprinkle fish with salt and pepper; place fish atop sauce.
  6. Bring to simmer.
  7. Cover skillet, reduce heat to medium-low and simmer until fish is just opaque in center, about 8 minutes.
  8. Transfer fish to platter.
  9. Simmer sauce to thicken slightly, if desired.
  10. Season sauce with salt and pepper.
  11. Spoon sauce over fish.
  12. Sprinkle with remaining 2 tablespoons cilantro.
  13. Surround with lime wedges and serve.
