Country Oat Cake
- 1 package cake mix spice
- 1 cup rolled oats uncooked
- 8 ounces yogurt, low-fat
- 3 large eggs
- 1/4 cup vegetable oil
- 1/4 cup water
- 1 1/2 cups apples chopped
- 1 cup rolled oats uncooked
- 1/2 cup brown sugar firmly packed
- 1/4 cup margarine melted
- 1/2 teaspoon cinnamon ground
- Heat oven to 350F (180C).
- Grease and flour 13x9-inch baking pan.
- For cake, combine first six ingredients.
- Blend on low speed of electric mixer until moistened; mix at medium speed 2 minutes.
- Stir in apple.
- Pour into prepared pan.
- For topping, combine oats, brown sugar, margarine and cinnamon; mix well.
- Sprinkle evenly over batter.
- Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean.
- Serve with whipped cream, if desired.
