Country Oat Cake

  1. Heat oven to 350F (180C).
  2. Grease and flour 13x9-inch baking pan.
  3. For cake, combine first six ingredients.
  4. Blend on low speed of electric mixer until moistened; mix at medium speed 2 minutes.
  5. Stir in apple.
  6. Pour into prepared pan.
  7. For topping, combine oats, brown sugar, margarine and cinnamon; mix well.
  8. Sprinkle evenly over batter.
  9. Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean.
  10. Serve with whipped cream, if desired.
