Avacado Soup With Green Peppercorns Recipe

  1. In large saucepan, cook the onion, garlic and spices in the extra virgin olive oil over moderate heat for 10 min, stirring often.
  2. Add in avacados and stock, bring to a boil, then reduce heat to medium.
  3. Cook 20 min.
  4. Cold to room temperature.
  5. Puree soup in blender till smooth.
  6. Return to pan, bring to a boil, add in peppercorns, reduce to moderate heat and cook 10 min.
  7. Serve garnished with cilantro and peppercorns.
