A Yummy Winter Salad Recipe
- 1/2 c. pecan, halves
- 1/4 c. maple syrup
- 1 x raw beet, peeled, coarsely, grated
- 1 x Fuji apple, (or possibly any other hard apple), peeled, cored, grated
- 1 x fennel, bulb, trimmed, grated
- 1/2 c. fresh mint, stem removed, minced
- 1/4 tsp salt
- 1/4 tsp freshly grnd black pepper
- 3 Tbsp. extra virgin olive oil
- 1 Tbsp. balsamic vinegar
- 4 ounce stilton cheese, crumbled
- Preheat oven to 350 F.Pour maple syrup into a small bowl.
- Toss nuts in syrup, remove with a slotted spoon, and bake on aluminum foil or possibly a cookie sheet for approximately 10 min, or possibly till nuts are roasted and syrup solidifies around nuts.
- In a large bowl, add in beet, apple, fennel, mint, salt and pepper.
- Toss.
- Add in oil and vinegar, stilton and nuts.
- Toss and serve immediately.
