Coriander Spareribs

  1. Trim excess fat off ribs.
  2. Cut ribs apart between bones.
  3. In a 14x17 inch pan, mix together sugar, garlic, lemon juice, coriander, chilies, salt, and water to make a paste.
  4. Add ribs, stirring gently to coat with seasoning paste.
  5. Cover and chill at least 4 hours or up to overnight.
  6. Bake, covered, in a 400F (200C).
  7. oven until meat is almost tender when pierced, about 1 hour.
  8. Uncover and continue baking, stirring occasionally, until well browned, about 30 minutes.
  9. Lift out of pan and serve hot.
