Spiced Date Mille Feuille

  1. Cut the puff pastry sheets in half then each half into four to give 8 rectangles.
  2. Place pastry onto a greased oven tray.
  3. Bake at 200C for 6 minutes or until golden brown.
  4. Turn onto a wire rack to cool.
  5. Cut in half horizontally.
  6. Combine the sugar and water over heat until the sugar dissolves.
  7. Add the liqueur and dates, reduced heat to low, cover dates with non stick paper and cook for 15 minutes or until soft.
  8. Stir mix until almost a paste and allow to cool.
  9. Spread date jam evenly over the 8 pastry bases.
  10. Combine Philly* filling ingredients and spread evenly over jam.
  11. Top with the pastry lids.
  12. Dust with icing sugar to serve.
