Creamed New Red Potatoes Recipe
- 8 new red potatoes
- 1/2 c. diced onion
- 1 tbsp. dry parsley
- 1/2 teaspoon celery salt
- 1/8 c. fresh parsley (opt.)
- 1 stick butter
- 1 c. lowfat sour cream
- 1/4 teaspoon salt
- 1 teaspoon pepper
- Scrub potatoes and dice into cubes.
- Place in saucepan and cover with water.
- Cover pan and bring to boil.
- Reduce heat and cook till tender, approximately 10 min.
- Add in diced onions when potatoes have boiled for 7 min.
- Don't overcook.
- Drain potatoes and onions.
- While potatoes and onions are draining, heat butter (in the pan you cooked the potatoes).
- Stir in lowfat sour cream.
- Return the potatoes and onions to the pan.
- Shake remaining seasonings over potatoes and toss till all ingredients are well mixed through potatoes.
- Garnish with fresh parsley (optional).
- Serve.
